Banana-Nut muffins (gluten-free)
 
Servings: 6-8 muffins
20 min 5 min prep
 

3 Tablespoons canola oil or melted butter
3 eggs
1/3 cup sugar
1/4 teaspoon salt
1/2 teaspoon vanilla
1/4 cup coconut flour
1/4 teaspoon baking powder
1 Mashed, ripe banana
1/3Cup chopped nuts (optional)
coconut flakes, for tops (optional)
 

Just mix up the ingredients. Blend into a smooth batter.
Scoop batter into a muffin tin with paper liners.
Bake 15-20 min at 400 degrees.
