Orange-Ginger
Glazed Baby Carrots
This recipe makes a wonderful side dish that is appealing to
all. The carrots end up being sweet and the ginger adds a really
nice boost to the flavors.
Ingredients:
1 lb. peeled baby carrots
1 tsp. freshly grated/finely minced orange zest (peel)
1/4 cup fresh orange juice (1 fresh orange is sufficient)
1 TBS butter
1 TBS honey
2 tsp. grated/finely minced fresh ginger
1/4 tsp. salt -- to taste
pinch of white pepper -- to taste
minced parsley – garnish, optional
Instructions:
Place carrots in a large skillet, cover with water and bring to
boil.
Zest (or peel) thin strips of orange peel. Mince. Cut orange and
juice.
Reduce heat, cover and simmer until still crisp- and just
tender, drain.
Add zest, juice, butter, honey, ginger, salt and pepper to
skillet and stir over medium-high heat until sauce evaporates a
bit and carrots are glazed. Garnish with minced parsley.
