Pumpkin Gingerbread

2 eggs
½ cup packed brown sugar
¾ cup canned pumpkin
2 Tb. Molasses
1 tsp. vanilla
¾ cup flour
1 tsp. baking powder
1 tsp. cinnamon
½ tsp. ginger
Optional but delicious:
2 Tb. Chopped candied ginger
2 Tb. Chopped walnuts
Preheat oven to 375 degrees. Spray a 9-inch square pan with
nonstick cooking spray.
Beat eggs with electric mixer at high speed for 2 minutes. Add
brown sugar slowly, beating well after each addition.
Add pumpkin, molasses, and vanilla. Beat at medium speed for 2
minutes.
Combine flour, baking powder, cinnamon, and ginger. Stir to
blend.
Add flour mixture to pumpkin mixture and stir well.
Add optional candied ginger and walnuts and fold in gently.
Pour into
prepared pan. Bake 20 minutes or until a wooden toothpick
inserted in center comes out clean. Let cool before slicing.
